Unlike Ferran Adria's El Bulli in Catalonia, D'O doesn't operate at a loss. According to the 2010 Michelin Guide, there are 229 one-star, 37 two-star, and as many as six three-star restaurants in Italy. Operating such restaurants is expensive. Oldani has created a Michelin restaurant for the masses by working on two fronts.
